Most Americans don’t consider mezcal a natural match for steak, which is more frequently paired with whiskey or red wine, but Jaye Parker and her partner are banking on the combination.

“My husband is a vegetarian, and he loves mezcal and I love steak, so we put it together,” Parker says of the premise for 52 Kilo, newly opened in Rogers, Arkansas.
