Pursuing nutritional virtue and craving barbecue are conflicting desires. Sconyers Bar-B-Que of Augusta, Georgia has a solution for the quandary. It’s called T-loin: smoke-cooked pork that the menu promises is 96 percent fat free and low in sodium. It doesn’t sound like fun, but it is one of the nicest things Sconyers serves: tender, juicy, gently smoky, and pleasingly porky. All it needs is a splash of sauce.
