Even though the Asian population of Harrison County, West Virginia, is growing, James Mai of Hello Vietnam allows he could probably still get away with serving pho made from dehydrated mix in Bridgeport, where 94 percent of the residents are white.

Yet Mai, a first-generation American, has made a point of shunning powders and preservatives since opening in December.
