If it served nothing else worth eating, Fat Man’s Mill CafĂ© in Augusta would demand a visit for squash casserole. A great drift of baked yellow squash flecked with onions, it is as egg-rich and soft as custard. Atop it rides a thick skin of cheese cooked enough to offer chew and crunch.
The recipe is a legacy of Pearl Harris, known to her followers as Miss Pearl. She created squash casserole for Fat Man’s progenitor in the 1950s and retired just a few years ago. She also developed the recipe for Fat Man’s fried chicken, which is famous for its brittle, vividly seasoned crust.
