In Aiken, South Carolina, there is a restaurant where sandwiches are all that matter. Named MacK’s (the capital K an ode to the proprietor’s daughter, Mackenzie), it takes its inspiration from America’s sandwich mother lode, the Delaware Valley.
MacK’s Boardwalk Special is a custom version of the Philadelphia cheese steak. Shreds of marinated sirloin and two kinds of cheese—American and provolone—fill a roll from Philadelphia’s 121-year-old Amoroso Bakery. Supplementing the cheese and steak are grilled peppers, mushrooms, and onions. The vegetables are a happy trio, but a cheese steak purist for whom onions are a proper garnish likely will find the peppers and mushrooms distracting.
