Hash is a passion in South Carolina. All the state’s important barbecues make it and serve it (on rice) to accompany smoke-cooked pork. Long ago I asked a pitmaster which parts of the pig went into it. He answered, “Everything but the squeal, from the rooter to the tooter.”
Midway BBQ is famous for hash, but not whole-hog hash. In fact, Midway hash contains no pork at all. It is made of beef and usually eaten as a main course.
