At the order counter of King’s Mackerel early in the lunch hour, I ask for the day’s special—a half-pound cheeseburger. The chef’s daughter says there will be a 20-minute wait.

Nothing’s served instantly at King’s Mackerel, located in Barnwell, South Carolina, about halfway between Augusta and Yemassee. The menu at this Roadfood treasure, brought to my attention by Jenn Farmer, advises, “All items are cooked when ordered.”
