When this story first appeared in Jacksonville Today, the WJCT newsletter which monthly features reporting from The Food Section, a reader complained that too many column inches were allotted to an out-of-state chain. (OK, he probably didn’t use the newsroom phrase “column inches.”) Obviously, we’re more interested in independent restaurants, but it’s foolhardy to pretend they don’t exist alongside monied operations which have outsized influence over how and what people eat. That’s why we often look at the intersection of chains and local businesses, including in the bustling bagel sphere.
