Lots of multinational companies have gotten off the ground with the help of well-heeled investors and deeply researched business plans. Coconut Glen’s, by contrast, started as a roadside coconut chopping stand in rural Maui.

After setting up his one-man operation in 2006, Glen Simkins developed recipes for coconut candy and dairy-free coconut ice cream. Although Simkins died earlier this year, his confections are still sold through three Coconut Glen’s locations in Japan, as well as from a food truck parked on Folly Beach.
