Where is America’s best fried chicken? Geographically, it’s in the South and Midwest. Kansas City, the Illinois River Valley, western Kentucky, southern Virginia, and the Carolinas are especially well-endowed. With rare exceptions, the outstanding examples are served in casual restaurants, some very casual. Like, gas station snack bars.

If you are an aficionado who’s prospected for fried chicken in South Carolina, you probably know where I’m going with this line of thought: to Bobop’s in the Hampton County town of Estill. It’s a Marathon service station with a minimart, and in the opinion of many connoisseurs, a purveyor of fried chicken that has no peer.
