In early April 2021, Amelia Wilson had a revelation. 

She was standing in a bowling alley parking lot in Dickson, Tennessee, a community west of Nashville with about 17,000 people. Like everyone around her, she was waiting for delivery from a company that makes monthly drops of organic food.
