Whether it’s a traditional beet salad served with soft cheese, such as the starter on the menu at Marcel, or the marinated beets and apples dish on the menu at Bread & Butterfly, beets are always on offer.
The beet craze runs the gamut across price points. The pastrami beet sandwich at Victory Sandwich in Decatur is a vegetarian take on the classic smoked beef sandwich, and West End’s Boxcar at Hop City occasionally offers a maroon-colored black bean and beet burger.
